Rice and Black Bean Pilaf
2 teaspoons olive oil
3/4 cup chopped celery
1/2 cup chopped onion
1 1/2 cups uncooked rice
14 oz vegetable broth
1 (15.5 oz) can of black beans, rinsed and drained
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lime juice
1/2 cup shredded vegan cheese (optional)
Heat oil in large nonstick skillet coated with cooking spray over medium-high heat.
Add celery and onion; cook 4 minutes, stirring occasionally.
Add rice and next 6 ingredients; stir gently. Bring to boil; reduce heat, and simmer 10 minutes or until liquid is absorbed. Add lime juice and mix gently.
Sprinkle with cheese before serving.
